Difficulty: Easy - for beginners
2 Medium sweet potatoes
2/3 C. Sugar
2 eggs (beaten)
1 small carnation evaporated milk (6oz.)
1 tsp. vanilla
Boil the sweet potatoes until tender. Pull off the skins. Cut into disks (this will cut the "strings" that run from end to end).
Use a blender on all ingredients until smooth.
Pour into a pie crust. (recipe will make one pie, often with a little to spare, depending on the size of your sweet potatoes)
Bake at 325 for about 60 minutes (or however long your church service may be) until set.
Meanwhile, pour any leftover filling into microwave safe custard cups. Microwave until set (this doesn't take long!), top with whipped cream, and eat while waiting for the pie.
