Parmesan Chicken with Green Beans

Ingredients

2 chicken breasts, butterflied
3 tsp garlic
1 tsp fresh thyme (also try with sage and oregano)
6 tbsp fresh grated Parmesan cheese (don't use the stuff in the bottle)
salt & pepper
1 cup white wine (if you wish)
2 cups green beans
Olive oil for frying

Method

preheat oven to a low broil, or around 375F.

salt and pepper the butterflied chicken breasts and have them open. Place about 1tsp of garlic in each chicken breast, and about 1/4 tsp of fresh thyme (or whichever herb you wish). Distribute about 1tbsp of cheese on the inside of each breast, then close up.

Place about 2 Tbsp oil in a pan that can go into the oven. Grill each chicken breast about 4 minutes per side on low-medium heat. You can add some white wine while the chicken is cooking, it'll sputter a bit. Distribute another 1Tbsp of cheese on top of each breast, then place pan low in the oven for about 5-6 minutes to continue cooking. Then place the pan high in the oven to finish broiling the cheese.

While chicken is cooking in pan, cook green beans (microwave for 5 minutes), then add oil to a second pan. Drain green beans, then fry in pan. Add 1 tsp garlic, wine, thyme, salt and pepper to taste. Fry for about 6-7 minutes, then add 2 Tbsp parmesan cheese and cook until cheese has just melted.
