4 to 7 lbs. pork picnic roast
BBQ Rub (bought at the store or make your own)
2 cups Apple Juice
1 cup Apple Cider Vinegar
1 teasp. Liquid Smoke
Take the roast and rub it down with the BBQ rub.
If you have time let it sit in the fridge overnight.
If not 15 to 30 minutes will do.
Take a dutch oven or heavy pot.
Combine Apple Juice, Apple Cider Vinegar and Liquid Smoke in the pan. Give it a stir.
Put the rubbed meat into the liquid.
Cook 4 to 5 hours depending on size of roast.
When cooked, pull it out of the liquid and slice or shred with a fork.
I usually use some of the juice in the pan and baste it.
Serve on rolls or buns with your favorite BBQ sauce.
