Chicken Piccata

Ingredients

4 to 6 boneless, skinless chicken breasts.
2 eggs
1 cup flour
2 cups Italian Bread Crumbs
3 tablespoons Olive Oil
Poultry Gravy Mix
1 Lemon
2 tablespoons white cooking wine.
Cracked pepper to taste.
1/4 teasp. dill weed
1/4 cup capers

Method

Preheat oven to 350
Pound chicken breasts flat with a mallet.
Whip 2 eggs with a tablespoon of water in a shallow bowl
Put flour and Italian Bread Crumbs in two separate shallow bowls.
Dip flat chicken breasts in flour, egg and bread crumbs in that order.
Drop in a pre-heated flat fry pan with the olive oil.
Let brown on both sides
When brown, put on a cookie sheet and put in oven for 20 minutes.

SAUCE:
In a quart sauce pan add
3/4 cup poultry gravy mix and water according to directions
2 tablespoons white cooking wine.
Juice the lemon into the pan
Add dill and pepper to taste. Let it cook until thick.
Serve chicken with a spoonful or two of the sauce over it.
Top with capers
