Homecoming Pot Roast

A simple pot roast that makes a great broth. The leftovers make for a great base for chili.

Ingredients

2-3 lbs. boneless roast
1 lg. onion coarsely chopped
2 tbsp. worchestershire sauce
2 tsp. salt
1/2 tsp. pepper
1 tbsp. brown sugar
2 lg. potatoes peeled and chopped or 8 quartered red skin potatoes
3 carrots peeled and chopped
1/2 cup shredded carrots
1 rib celery chopped
3 cups of water with a bullion cube, or 3 cups of chicken or beef stock

Optional: add 1 tbsp. veal demi-glace and 1/8 cup red wine.
At the table: sprinkle with Lawry's Seasoned Salt

Method

In a crock pot add the meat and vegetables.

In a saucepan heat the water (or stock), wine and worchestershire sauce. Then add the sugar, salt, and optional flavor enhancers (buillion cubes or veal demi-glace). Bring to a boil then add to the crock pot.

Cook in the crock pot for three hours.
