Healthy Apple and Fig Breakfast (or Dessert)

This is a fabulous tasting NO COOK breakfast or dessert, made with diced fresh apples, figs, almonds, honey (or Agave), and finally, sweet spices to top it off.

Ingredients

1 apple, diced
1/2 TB apple juice
1/8 tsp Lemon Juice
2 Dried Turkish Figs (or fresh, if in season)
2 TB Whole Almonds (you can use chopped or slivered almonds, if you have them; I didn't)
Pinch of Cinnamon
Pinch of Cloves
1 tsp Honey (or sub Agave Nectar if you are Vegan)

Optional:
Pinch of Allspice
1/4 tsp Lemon Zest (recommended from Organic Lemons)

Method

1. Slice and core the apple and dice into a dish into small bite-size pieces.
2. Add Lemon and Apple juice and toss.
3. Cut the stem off the figs, and dice into bite-size pieces. Add to the apples.
4. Add the almonds and spices and toss until combined.

For the best nutrition, eat immediately. If you prefer it chilled, cover and place in the refrigerator for up to 8 hours, but this is absolutely delicious as-is.
