Carrot Wedding Cake

3 cups sugar
2 cups cooking oil
5 egg yolks
4 cups grated carrots
4 1/2 cups flour
1 1/2 teaspoon cinnamon
3 teaspoons soda
1 1/2 teaspoon salt
1/2 pound chopped dates
1 cup chopped nuts
6 egg whites, stiffly beaten


beat the sugar and oil until creamy. Add the yolks and beat well. Mix in the grated carrots. In a separate bowl, blend together the flour, cinnamon, soda and salt, reserving 1/4 cup; gradually add to creamed mixture. Toss the dates and nuts with the reserved 1/4 cup flour and mix in. Fold in the beaten egg whites. Pour into prepared pans and bake at 325 degrees for 1 hour and 25 minutes.
