dark Carrot Cake

3 eggs
3/4 cup cooking oil
3/4 cup buttermilk
2 cups sugar
2 teaspoons vanilla
2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
1 cup crushed pineapple, well drained
2 cups grated carrots
3/4 cup flaked coconut
1 cup chopped nuts


Beat the eggs, pil, buttermilk, sugar and vanilla until creamy. Mix the flour, baking soda, cinnamon and salt together and add. Add pineapple, carrots, coconut and nuts, mixing well between the addition of each. Pour into greased 9x13" pan in 350 degree oven for about 55 minutes.
