Carrot-Pineapple Cake

1 1/2 cups salad oil
2 cups granulated sugar
3 eggs, beaten
1 cup crushed pineapple and juice
2 cups grated carrots
2 1/2 cups flour
1 teaspoon soda
1 teaspoon salt
1 teaspoon cinnamon
1 cup walnuts
1 teaspoon vanilla


Cream oil, sugar and eggs well. Add pineapple, juice and carrots.
In a separate bowl, sift flour, soda, salt and cinnamon together; add and mix well. Mix in walnuts and vanilla. Pour into prepared pans. Bake at 350 degrees F for 45-50 minutes for small layers.
