2 tbs Olive Oil.
1 lb Boneless Chicken Breast cut into 1/2" cubes.
1/2 Cup Celery cut into 1/8" slices.
1/2 Cup Diced Carrot.
1/2 Cup Diced Onion.
1/4 Cup Parsley.
8 Cups Prepared Chicken Broth.
1/4 tsp. Black Pepper.
In a Stock pot add the Olive oil and bring to temp.
Add the chicken and cook done through and browning just a bit.
Add the onion and cook to clear with a pinch of salt.
De-glaze the pot with a little stock.
Add the Parsley, Celery, Black Pepper and Carrots.
Add the rest of the stock and simmer for 1 hour.
