Chicken Broccoli Rice Casserole

2 bunches fresh broccoli florets (you can use frozen if desired) (cooked)
4 c. Minute Rice (cooked) - I use the brown rice
2 cans cheddar cheese soup
2 cans cream of chicken soup
2 cups sour cream
2 cups cooked shredded chicken (or 2 large cans white meat chicken)
Salt and pepper to taste
16 ounces shredded mild cheddar cheese – divided in ½
about 1 cup bread crumbs


Mix all ingredients (except bread crumbs) in a large bowl. Add ½ of the cheese to the mix, then pour into 13 x 9 casserole dish lightly sprayed with oil. Top with remaining shredded cheese and bread crumbs. Bake in oven at 350 degrees for 30-40 minutes.

You can make this without the broccoli or make a small casserole for the kids without it then add it to the remaining for you. (you won’t need as much broccoli for this – I use 1 bunch when I do this) Or make a large one w/o broccoli for the kids and a small one for you. Just get a small bunch for this.
