Lemon Blueberry Muffins

taken from a recipe off Taste of Home - but I did modify it a bit to fit my taste liking :)

Cooking time: 20 mins

Difficulty: Easy - for beginners
Serves: 20


1/2 c butter
1 c sugar (I used organic sugar - worked nicely)
2 eggs
1/2 c milk
3 TBS lemon juice
2 tsp lemon peel
2 c flour
2 tsp powder sugar
dash salt
6 oz (or more) blueberries
(if using fresh blueberries wash them 1st and set them aside to dry)

1 1/2 c powder sugar
1 TBSP butter
1 tsp vanilla


Preheat oven to 350.

In medium sized bowl, mix butter, sugar, eggs and milk; add lemon juice and lemon peel. Add sifted dry ingredients; fold in the blueberries. Taste batter!! :)

Fill cupcake liners 3/4 full and bake for 20 minutes. Remove from pan and let cool; drizzle with glaze.
