Banana Bread

my mama's recipe - I changed it just a bit :)

For the best tasting bread, make sure your bananas a very very ripe (dark/black-mushy and oozing!!)

Preparation time: 20 minutes
Cooking time: 20-45 mins

Difficulty: Easy - for beginners


3 ripe bananas
1 c sugar
½ c shortening (Crisco, if possible)
2 eggs
1 teaspoon vanilla

2 c flour
1 teaspoon baking soda
1 teaspoon baking powder

1 c nuts (almonds or pecans, optional)


Preheat oven to 350.

Mash bananas in bowl and set aside.

Cream sugar and shortening; add beaten eggs and vanilla and mix well. Mix mashed bananas into mixture. Add all dry ingredients and mix gently. Add nuts, if desired.

Pour into loaf pans and bake approximately 45 minutes.
Muffins bake approximately 20 minutes.
For larger pans, allow more baking time.
