Difficulty: Easy - for beginners
15 oz crushed tomatoes
2 lg zucchini; sliced
1 red or green sweet bell pepper, sliced
1/2 c onion, chopped (optional)
4 TBSP olive oil
2 tsp Italian seasoning
2 tsp red pepper flakes (2 Pizza Hut packs :)
1 tsp cayenne pepper powder
1/2 c Parmesan cheese
2 c penne pasta, cooked and drained
6 oz Provolone cheese, shredded
sm package of frozen Italian meatballs, if desired
8 oz Mozzarella cheese, shredded
In large baking dish, add tomatoes, zucchini, sweet bell pepper, onion (optional), olive oil, Italian seasoning, red pepper flakes, cayenne pepper powder and Parmesan cheese. Cover with foil and bake 350 oven for 20 minutes. As this is baking, cook noodles and set to drain.
Remove vegetable dish from oven; add penne pasta, meatballs (if desired), and provolone cheese - mix well make sure all pasta is covered. Cover once again with the foil and bake another 20 - 30 minutes.
Remove from oven and immediately top with Mozzarella cheese - let cheese melt on top (do not put back in oven) - the heat will melt the cheese.
