1 medium onion chopped
1 tbs butter
2 cans chicken broth
2 cups potatoes peeled and diced (about 3 potatoes)
2 cups cooked pumpkin (fresh pumpkin best)
2 cups heavy cream
1/2 tsp salt
2 tbs curry powder (not McCormick's)
1/4 cup sugar
3 bacon strips cooked and crumbled for garnish
In large saucepan saute onion in butter until tender. Add broth, potatoes, and pumpkin. Cook until potatoes are tender, about 15 min. Remove from heat and cool. Puree 1/2 of mixture in blender, then other 1/2 until soup is smooth. Return to the pan. Add heavy cream, salt, curry powder, and sugar. Heat thoroughly.
Spool into bowls and add bacon crumbles for garnish.
