Pumpkin Crisp

Part 1
1 yellow cake mix (can reserve 1 cup for topping)
1/2 c soft butter or margarine
1 egg

Mix well and press into bottom of cake pan.

Part 2
1 can pumpkin
2/3 c milk
1 tsp cinnamon
2 eggs
3/4 c sugar

Mix well and pour onto Part 1 in cake pan.

Part 3 - Topping
2 c yellow cake mix
1/2 c butter
1 1/2 tsp cinnamon
1/2 c sugar

Mix with a fork (or your hand) so that the mixture does not "mush together" and sprinkle on top of part 2.

(you can use less cake mix above and save 1 cup for this topping - I like to double the topping - so I will buy 2 cake mixes in order to do so...or you can buy 1 box cake mix and make it work for the entire recipe)


Follow recipe directions above after each "part" of ingredients.

Bake at 350 for 45-50 minutes.
