Curry Lentils and Rice

1/2 c dried red lentils
1 1/2 c H2O
3 carrots peeled and cut into 2-inch pieces
1/2 c chopped onion (i always used red onion)
1/4 c golden raisins
2 tbsp unsalted butter
1 tsp salt
3/4 tsp good-quality curry powder (i use red curry paste usually)
1/2 tsp fennel seeds
freshly ground pepper to taste


1) combine lentisl and 1/2 c water in 2qt microwave-safe casserole. cover and cook at full power for 5min. (if the water foams and spills over replace it with 1 or 2 tbsp water)
2) stir in carrots and another 1/2c water. cover and cook 5 min
3) stir in the remaining 1/2c water and all the other ingredients. Cover and cook 5 min
4) serve immediately over cooked brown rice

Pan-cooked pita in olive oil, salt & pepper goes great alongside!
