bubble tea

Up to 1/2 c tapioca pearls, any size
Sugar to taste
Black tea bags, one for each person
Any other flavored tea, I recommend Celestial Seasonings Blueberry tea, one bag per person
Ice cubes
Milk or Half&Half or soymilk


Boil water for tea. Brew all tea bags together, with about a cup of water per person. After steeping, remove tea bags and add sugar, slightly more than seems enough as the sweetness is diminished when the tea is cold. Put the tea in the fridge to chill, in whatever sort of container you like.
Bring a medium saucepan 3/4 full of water to a boil. Slowly pour the tapioca pearls into the water and boil them for 20 minutes. Turn the heat off and let them sit 5 minutes, or until the pearls have turned clear. Strain the water, either by holding the lid over the pot and carefully pouring out the water while not letting the pearls fall out, or by pouring water and bubbles into a colander with very small holes, or a strainer. Put bubbles in a bowl with a little sugar and stir. Once the tea is cold enough, put a few spoonfuls of bubbles into the bottom of tall glass cups, add ice cubes, and pour tea and then milk over all. Drink with straws that the bubbles can fit through.
