Beet and Onion Salad with Lemon Juice

Ingredients

beets, 1 lb
onion, 1 medium
cider vinegar, 2 tbsp
lemon joice, 1 tbsp
honey, 1/2 tsp

Method

Oven to 400 F.
Wrap beets in foil, cook in oven 1 hr until tender.
Peel and slice beets.
Slice onion.
Layer onion and beets.
Prepare dressing and pour over beets and onions.
Chill about 1 hr.
