Crawfish Pie

Serve with salad, crusty bread and a good wine and enjoy this special treat from Louisiana!

Preparation time: 15 minutes
Cooking time: 1 hour

Difficulty: Easy - for beginners
Serves: 8


1 large onion, minced
1/4 cup green peppers, chopped
2 cloves garlic, minced
2 ribs celery, chopped
1/2 cup butter
1 can cream of celery soup
1 pound crawfish
1/4 cup parsley
1/2 cup bread crumbs
salt and pepper to taste
1 egg, beaten
1 cup milk
two 9 inch single crust pie shells
Season with Cajun seasoning to taste


Saute onion, garlic, pepper and celery in butter until limp. Add crawfish and parsley. Simmer for 10 minutes to render fat from crawfish and then add soup. Cook for 10 minutes. Turn off heat and add bread crumbs, salt, pepper, egg, milk and Cajun seasoning. Mix well. Pour equal amounts in each of the two pie shells and place on a baking sheet. Bake at 350 degrees for 35 to 40 minutes or until the center is firm.
