â€¢ 2 Cups flour (this works great with Bob's Red Mill GF FLour -- it won't "rise" as much and won't roll out as far, and the cracker will be denser, but still delicious!)
â€¢ 1 tsp. baking powder
â€¢ 1/2 tsp. salt
â€¢ 2/3 Cup warm water
â€¢ 1/3 cup olive oil
â€¢ 1 tbsp dried lavender, lightly ground with mortar and pestle
â€¢ about 2 tbsp of honey (local and flavourful is a plus!)
â€¢ rock salt
-Preheat the oven to 400.
-Mix together the dry ingredients to ensure that lavender and baking powder are spread out among the flour, and then stir in the water, oil and mix until a smooth dough forms.
-Roll out into a large rectangle. (fingers are fun to use, for a more naturaly look). Divide in half, and then cut crackers as big as you want them to be. Should take two cookie sheets hence dividing in half). you can put each half on a sheet and cut it on there, and they in theory will break apart, but I cut them all out and laid them out slightly separated.
-put honey in nuker so that it's super runny. Dip back of the spoon, and spread a bit of honey on the top of each cracker. Repeat until all have some.
-sprinkle salt all over the tops of the crackers, esp. over the honey
-Bake for 10 minutes until the crackers are golden and crispy.
