Blackberry Oatmeal Muffins

Yummy berry muffins. Substitute strawberries, blackberries, blueberries...whatever you have on hand fresh or from the freezer!

2 c. flour
1 c. oatmeal
1 c. packed brown sugar
1 1/2 t. baking powder
1/2 t. baking soda
1/2 t salt
1/4 t each of cinnamon and nutmeg or 1/2 t. allspice
1 c. milk
1/4 c. oil (or 1/4 c. applesauce)
1 t vanilla extract
1 egg
2 c. berries (fresh or frozen)


Whisk together dry ingredients. Mix together wet ingredients and gently blend the two together. Muffins are the most tender if they are not overworked at this stage. Lightly fold in berries so the don't crumble. Fill mini or regular muffin tins. Bake 350 for 20 min.
