Meatballs - w apricot

Difficulty: Easy - for beginners


2 lbs ground beef (lean)
2 c soft bread crumbs
1/2 c onion, diced
2 TBSP parsley
2 eggs
2 tsp salt

2 TBSP margarine

1 10-oz jar apricot preserves
1/2 c barbecue sauce


Combine meat, crumbs, onion, eggs, parsley and salt; mix well. Shape into 1-inch meatballs.

Melt margarine in non-stick skillet on med-high heat; melt butter (if heat is too high, turn down :). Brown meatballs in margarine; once meatballs are cooked place all meatballs into a 2-qt saucepan, casserole dish or into slow cooker. Combine apricot preserves and barbecue sauce into bowl and mix well; pour over meatballs.

In casserole dish, bake meatballs for approximately 30 minutes at 350 degrees - in saucepan cook for an addional 30 minutes and in slow cooker cook for 2 hours. Stir each occassionally.

makes about 4 dozen meatballs
