Bean burritos

Ingredients

Bean filling:
Beans, 3 cans, about 16 oz per can, drained (red, black, pink, etc.)
Oil, 1 tbsp, for saute
Onions, 2, chopped
Garlic, 4-6 cloves, minced
Cumin, 1-2 tsp, ground or seeds
Peppers, sweet or hot, if desired, 2
Cilantro, if remembered, 1 bunch
Tomato sauce or paste, 8-16 oz, if desired.

Toppings:
Tomatoes, chopped
Lettuce, chopped
Avocado (or guacamole)
Onion
Sour cream (if non-vegans are present)
Salsa

Tortillas, 6-8

Method

Heat oven to 200 F and warm tortillas in foil.

Make bean filling:
Saute garlic and cumin seeds in oil.
Add onion, cook to medium-soft.
Add beans and remaining ingredients.
Simmer.

While simmering, prepare toppings.
