1/4 cup unsalted butter, melted
3 tbls Dijon mustard
1 1/2 tbls honey
1/4 cup dry breadcrumbs
1/4 cup finely chopped pecans
4 tsp chopped fresh parsley
4 (4 oz) salmon fillets
Salt & Pepper, to taste
Preheat oven to 400 degrees. Line a baking sheet with parchment paper and set aside.
In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix bread crumbs, pecans, and parsley.
Place salmon fillets on the prepared baking sheet. Brush each lightly with honey-mustard & sprinkle the tops of fillets with breadcrumb mixture. Bake 12-15 minutes until fish flakes easily when tested with a fork in the thickest part. Season with salt and pepper and garnish with lemon wedge & parsley sprig.
