1 15-oz can pumpkin
4 lg eggs
1 c vegetable oil
1/2 c milk
1 tsp vanilla
3 c all-purpose flour
1/2 tsp pumpkin spice
1 tsp cinnamon
2 tsp baking soda
1 tsp baking powder
2 c granulated sugar
1/2 c brown sugar
1 c sweetened dried cranberries
1/2 or 1 c pecans, chopped (optional)
Preheat oven to 325 degrees. Grease and flour 2 lg loafs pans or 3 small.
Combine dry ingredients: flour, pumpkin spice, cinnamon, baking soda, baking powder, granulated sugar and brown sugar into a medium-sized bowl and set aside.
In large bowl mix pumpkin, eggs, vegetable oil, milk, vanilla for one minute. Then add the bowl of dry ingredients slowly into the mixuture. Beat this on low speed for two minutes. Fold in cranberries and nuts (optional).
Spoon batter into loaf pans. Bake for 60-65 minutes or until wooden toothpick inserted in center comes out clean. Cool in pan for about 10 minutes, then, put onto wire racks to cool completely.
