Beet Nik Cake

Ingredients

CAKE:
2 squares unsweetened chocolate
1 1/2 cup sugar
1/2 teaspoon salt
1 1/2 teaspoon baking soda
1 cup cooking oil
1/2 teaspoon vanilla
2 jars (4 1/2 ounces) strained beets of baby food
3 eggs slightly beaten

FROSTING:
1 cup brown sugar
1/4 cup milk
1 stick butter

Method

CAKE:
Melt chocolate and cool. Transfer to large mixing bowl. Add remaining ingredients and beat thoroughly. Pour into 9 x 13 pan and bake at 350 degrees F for 35 minutes.

FROSTING:
Boil 4 minutes, stirring constantly. Cool and beat till thick and creamy and spread on cake.
