Difficulty: Easy - for beginners
3-4 lb. bottom round roast
4-6 red bliss potatoes, cut in quarters or eighths
1 onion, sliced
2 cups beef broth or boullion
seasonings: garlic powder, basil, bay leaf, oregano, salt, pepper
Coat the roast in seasonings. Place it in bottom of large crock pot. Place vegetables and bay leaf around the beef. Pour the stock in, making sure not to pour over seasonings on beef. The stock should come to about 1/3 up the roast.
Cook on low for 8-10 hours, give or take.
Serve with beef gravy and/or horseradish sauce.
Horseradish sauce: 1/2 cup each of miracle whip or mayo and sour cream, 1 rounded tablespoon of prepared horseradish, 2 tsp dijon mustard, salt and pepper. Combine.
