Grilled fish & Black bean/banana salad

Delicious, spicy yet sweet, low cal/low fat, recipe to liven up any fish dish.

Preparation time: 15 min.
Cooking time: 30 min.

Difficulty: Easy - for beginners
Serves: 4


1 cup black beans
2 semi-firm bananas (with some green showing) peeled and chopped
1 small red onion
3 small jalapeno peppers - seeded and chopped
Juice of 1 lime
2/3 cup packed cliantro
2 tsp chili powder
olive oil
6 6oz. fish filets (best with mahi-mahi; tilapia)
1 tsp sea salt
fresh ground black pepper


In a large bowl, combine beans, bananas, onion, jalapenos, lime juice, cilantro, and chili powder. Cover and refrigerate until ready to serve.
Season the fish with salt/pepper and some chili powder. Grill on medium-high heat - 3-4 min. per side. OR bake in the oven at 375 degrees for 25-30 min.
