Difficulty: Easy - for beginners
1 1/4 cup flour
1/4 cup butter, cubed
1/3 cup paramesan cheese, grated
1/4 tsp dry mustard
1/4 tsp cayenne
pinch of salt
4-6 tablespoons of cold milk
2 egg yolks
1 cup whipping cream
1 cup milk
2 tsp nutmeg freshly ground
grated mixed italian cheeses
Put dry ingrediendts in a food proccessor and pulse to combine. Add butter and pulse till resembles coarse meal.
Add milk tablespon at time until a dough forms - only add what is needed.
Make a smooth ball and pat to a disk. Wrap and chill thoroughly.
Roll out til 1/8 inch thick
and put in pie plate withouth stretching the dough. make fork indents to eliminate bubbles, cover with foil and weights.
Bake 375 for 20 min
Make filling as follows...
Whip eggs, milk, cream, nutmeg til light.
Cover with cheese.
Bake 400-35-40 minutes. protect edges with tinfoil if necessary.
