Twice Baked Potato

1 large baking potato
1/4 cup sour cream
1 tablespoon butter, softened
1 tablespoon milk
1/4 cup cheddar cheese, finely grated
Salt and pepper, garlic herb to taste


Preheat oven to 425 degrees

Clean potato with water and brush or hand. Poke five or six holes in the potato with a knife. Rub olive oil on potato. Place potato directly on oven rack and bake for an hour.

When potato is soft in the center remove and slice potato lengthwise in half. Scoop out the potato leaving the skin. In a medium size bowl mix the potato with all other ingrediants until smooth. Scoop potato mixture back into the skin and bake for another 15 min. Top with bacon bits or chives.
