Banana Nut Bread

Difficulty: Easy - for beginners


3 medium ripe bananas, mashed
1 cup sugar
2 eggs, well beaten
2 cups flour
1 teaspoon soda
1/4 teaspoon salt
1/2 cup cooking oil
1/2 cup nuts or raisins
1 teaspoon vanilla


Cream together oil and sugar. Add eggs. Sift together all dry ingredients and add to cream mixture alternately with bananas. Stir in nuts or raisins. Pour into greased loaf pan. Bake at 350 degrees F for 45 to 60 minutes until done. Remove from pan, cool on rack. When cool, wrap in aluminum foil to keep bread nice and moist.
