Momma's Chicken and Rice

Difficulty: Easy - for beginners


1 Cup of rice
tsp Cooking oil
1 Onion (chopped)
1 Carrot (grated)
1 Bell pepper (chopped)
1 Can Cream of Chicken or Cream of Mushroom Soup


Brown onion, bell pepper and rice in cooking oil until onion is clear and rice is slightly brown. Season to taste. Pour ingredients into backing pan, rinse with approximately 1/2 cup of water and pour into rice mixture. Add soup and mix well, place chicken on top of mixture and bake at 350 degrees for about an hour or until chicken and rice is done.
