2 1/2 cups flour
3/4 cup powdered sugar
1 cup (2 sticks) butter or butter substitute, soft but cool
Mix flour and sugar in a mixer or food processor, for 5 seconds until combined. With the mixer running, add butter one slice at a time, and mix for one minute until thoroughly combined. Put dough on parchment paper, wax paper, or plastic wrap and press down until you have a patty 1 inch thick and cover the top with more paper/wrap. Refrigerate 20-30 minutes until firm (Dough can be refrigerated 3 days or frozen 2 weeks; defrost frozen dough before using).
Preheat oven to 375 degrees F.
For rolled cookies, roll out some of the dough on parchment or wax paper, use cookie cutters to cut shapes and peel away the excess dough. Put paper on a cookie sheet and bake in oven for 10 minutes until cookies are a light golden brown. Cool cookies on a wire rack and decorate!
For bar cookies, mix in dried fruit, chocolate chips, and/or nuts of your choice and press into a dish approx. 12x12 inches. Bake in oven for 20 minutes until golden brown.
