Root Gratin

Ingredients

1 lb parsnips peeled
1 lb sweet potatoes peeled
1 lb celery root peeled
1 lb russet potatoes peeled
1 c heavy cream
1/2 c chicken or vegetable stock
1 tsp tarragon
1 tsp minced garlic
6 oz gorgonzola cheeze crumbled
1 tsp salt
2 tsp ground pepper

Method

preheat oven 400 degrees
slice vegetables to 1/4" thick slices
toss with cream, stock, tarragon, salt, pepper, garlic, and cheese
pile in prepared dish
cover loosely with foil (nonstick foil is available)
bake 1 hr until fork tender
remove foil
leave on middle rack and turn broiler on high for 3-4 min
