Difficulty: Easy - for beginners
2 Cups Fruit of choice (or 2 cans of canned fruit)
2 Cups Sugar - divided
1/4 Cup Water
1/4 Cup Cornstarch
3 TBLS Water
1 Cup All Purpose Flour
1/2 Cup Margarine (softened)
1 Cup Pecans (finely chopped) or Almond Slivers
1-8 oz Package of Cream Cheese (softened)
1-9 oz Bowl of Whipped topping
Combine fruit of chioce, 1 cup of sugar and 1/4 cup of water into a saucepan over low heat until berries are soft, approximately 15 minutes. Combine cornstarch and 3 TBLS water in small bowl, stir well and add to berries, cook until thickened. Cool.
Combine flour, margerine and pecans in a mixing bowl. Mix well. Press dough into a 9x13 baking dish. Bake at 350 degrees for approximately 20 minutes. Cool.
Combine cream cheese and 1 cup of sugar and beat until smooth. Fold in whipped topping. Spread filling mixture evenly over cooled crust. Pour fruit mixture over the cream cheese mixture. Refrigerate for approximately 1 hour, cut into squares, serve.
