Strawberry Salad with Maple Balsamic Vinaigrette

1 bag of spring mix lettuce (found near other bags of lettuce)
1 pint of strawberries, quartered
1 bag of chopped walnuts
optional blue, goat, or feta cheese

2 tablespoons maple syrup
2 tablespoons red wine vinaigrette
2 teaspoons Dijon mustard
½ cup vegetable oil
freshly ground pepper to taste


Combine maple syrup, red wine, and Dijon in a small bowl. Whisk in the oil until emulsified.Place about 1 generous handful of lettuce onto a small plate or bowl. Top with a small handful of strawberries and smaller handful of nuts. If you would like, you can top with a little bit of cheese. Drizzle with maple balsamic vinaigrette.
