New Year's Turnip Greens

I admit I'm not a fan of turnip greens. But I'm more superstitious, so I made these to welcome in 2011. And man, NOW I'm a fan! But don't make me drink the pot likker ... :)

Ingredients

2 pounds turnip greens (I buy the Glory brand already chopped, cleaned and ready to cook)
1/2 pound salt pork, rinsed and diced
1 1/2 cups water
1 cup fine chopped onion
5 cloves garlic, minced
1/2 tsp. pepper
1 tsp. sugar, optional
1/2 tsp. crushed red pepper flakes, optional

Method

Even though the bag will tell you the greens are ready to cook, go ahead and rinse and drain them well. You may find some pieces that aren't really good. Pull 'em out and keep going.

Cook salt pork in large dutch oven over medium heat until crisp and brown. This will create some nice fat in the bottom of the pot. Add onion and garlic to salt pork and cook for a minute or two until a bit tender. Add pepper, sugar, red pepper and water. Then add that whole bunch of turnip greens.

Give it a good stir and turn heat to medium low and simmer 40 - 45 minutes. Taste and adjust seasonings as you prefer (I like a tad more salt in mine).

Serve with vinegar or pepper sauce and cornbread.
