Keith's Gumbo

1 large onion
3 cloves garlic
3ribs celery
1 med. bell pepper
saute above until done, not brown

add 2.5 lb cut okra (fresh is better)
cook slowly until liquids released from okra

2.5 lbs raw shrimp
1 can tomatoes
salt-tabasco- pepper -bay leaf- hambone (optional)
and 1 package of frozen gumbo crabs


simmer, cooking very slowly for about 3 hours you can add a little water

best if cooked, then put in refrigerator until ready to eat, and then reheated
