Warm Chocolate Pie Pudding

Submitted by:
This recipe came from my mother always making us chocolate pies and watching us scrape the meringue off and not eat the crust. Eventually, she just tweaked the recipe and made the filling a pudding!

Preparation time: 5 min
Cooking time: 30 min

Difficulty: Easy - for beginners
Serves: 6-8

3/4 cup sugar
2/3 cup flour
3/4 tsp salt
2 tbsp cocoa
3 1/2 cups milk
1 egg
1 egg yolk
1 1/2 tsp vanilla extract
4 tbsp butter or margerine
Whipped cream

Mix sugar, flour, salt, and cocoa together. In a double boiler, warm milk to room temperature. Prepare eggs in another bowl by mixing them but not beating them. When milk is warm, take about 1/4 cup of the milk and stir into dry mixture until well mixed. Continue adding small amounts of milk until creamy, then put mixture into milk on boiler. You must stir CONSTANTLY from this point on to avoid lumps! Stir until pudding holds its own shape when dripped on itself, usually about 10-15 minutes. Take everything off heat and spoon a little of pudding into the eggs and mix until smooth. Transfer egg mixture to pot and return to heat. Cook 2-3 more minutes until thick again. Finally, take off heat and add vanilla and butter.
Top with a dollop of whipped cream and you are good to go!!
