Bruschetta

Ingredients

Pre-made bruschetta crackers (most likely found in the specialty foods or Italian aisle)
2 roma tomatoes, chopped finely
1 clove of garlic, chopped finely or minced
1 ½ tablespoons of fresh basil, chopped
1 tablespoon of extra virgin olive oil
1 teaspoon of balsamic vinegar
Thinly sliced fresh mozzarella cheese or packaged shredded mozzarella cheese

Method

Pre-heat the oven to 350 degrees. Add the tomatoes, garlic, basil, olive oil, and the balsamic vinegar into a small mixing bowl. Stir with a spoon until well blended. Spoon onto the crackers, not too much, and top with the mozzarella cheese. Place into the oven and bake for about 8-10 minutes or until cheese is just melted. Top with fresh ground pepper and serve warm. Serving size is 2 crackers
