1 pkg (20 oz) refrigerated sugar cookie dough
1/4 cup creamy peanut butter
1 pkg (8 oz) cream cheese, softened
1/2 cup packed brown sugar
1/2 tsp vanilla
2 medium Granny Smith apples, peeled, cored and sliced
1 cup lemon lime soda
1/4 cup caaramel ice cream topping
1/2 cup chopped peanuts
Preheat oven to 350 degrees
Remove 1/2 cup of cookie dough and reserve for another use.
Roll dough lightly into a 14-inch circle on 15-inch baking sheet
Bake 11-14 mins or until light golden brown. Cool 10 mins. Carefully loosen cookie from baking sheet and cool completely.
Combine peanut butter, cream cheese, sugar and vanilla in a 1-quart bowl, mixing until smooth.
Spread over top of cookie evenly
Peel, core and slice apples. Dip apples in lemon lime soda to prevent browning. Arrange apples over cream cheese mixture, circularly.
Sprinkle with ground cinnamon.
Heat caramel topping in microwave on HIGH 30 - 45 seconds or until warm; drizzle over apples.
Serve very shortly after this step as cookie can become soggy if standing too long.
