1 cup polenta / 2 cups water
6 peppers (red or green)(I prefer red, they are sweeter!)
1/4 cup banana peppers rings (mild)
2 Tblsp. jalapeno rings
2 cups strong cheese of your choice (grated)
1/2 lb Italian sausage ground
cook dry polenta in water 1/2 hour stirring regularly to keep from getting lumpy (follow package instructions)
cook sausage - drain (set aside)
chop onion and both peppers in food processor.
prepare peppers, cut off tops and clean out insides.
When polenta is done stir in the cheese, onion, the chopped up hot/mild pepper rings and the sausage.
Stuff the peppers with the mix leaving room for a topper of cheese.
Place in 350 degree oven for 1 hour.
(you may want to carefully peel the skin from the peppers after they cook)
