Coconut Rice Cake

Ingredients

1.5 cups sugar
1 can coconut milk (14 oz)
.5 cup oil
3 eggs
1 tsp vanilla
1 pack (16 oz) glutinous rice flour (also known as mochiko)
1 tsp baking powder
1 cup coconut flakes (optional)
2 tbsp black sesame seeds

Method

Preheat oven to 350. Beat eggs, sugar, oil, vanilla and coconut milk. Stir in baking powder, flour, coconut flakes, and sesame seeds. Bake for 1 hour in 9x13 pan.
