1 lb. lean ground beef
4 c. egg noodles, uncooked
1 (8 oz) can unsweetened pineapple chunks
1 (15 oz) can mandarin oranges
1 Tbsp. soy sauce, reduced sodium
1 T. lemon juice
2 T. cornstarch
1/4 tsp. salt
1/4 tsp. garlic powder
1/8 tsp. ground nutmeg
1/3 c. salted whole cashews
1/3 c. flaked coconut, toasted
Cook the noodles according to the package directions. Meanwhile, in a large skillet, cook the ground beef over medium heat until no longer pink and drain.
Drain pineapple chunks and mandarin oranges, reserving juices. Set fruit aside. In a small bowl, whisk cornstarch and reserved juices until smooth; stir in the lemon juice, soy sauce, garlic powder, nutmeg and salt. Pour over the beef.
Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in cashews, oranges and pineapple. Cook for 2 minutes or until heated through. Drain noodles; top with beef mixture. Sprinkle with coconut.
