Marmalade Cake

Delicious fruit loaf, allow it to cool before eating. No matter how good it smells, the molten marmalade will be painful on your tongue :)

Ingredients

6oz Margerine
3oz Caster Sugar
2 Large Eggs
6 Tbsp Thick-Cut Marmalade (pref homemade)
8oz Self Raising Flour
4oz Sultanas
1 Tbsp Unrefined Brown Sugar (large crystals)

Method

Preheat oven to GM4 350°F 170°C
Grease and line a 2lb Loaf Tin
Cream together Margerine and Sugar
Add eggs one by one, beating after each addition
Beat in Marmalade then stir in remaining ingredients
Fold into tin and smooth over, but don't hollow out centre
Sprinkle the brown sugar over the mixture
Bake at preheated temp for for 30mins then GM3 325°F 160°C for a further 1hr 15mins.
