Rabbi Blues Apple Cake

My mum used to make this cake as a warm pudding in winter. Delicious served with cream, custard, ice cream......or a pleasant combination of the three ;)

5oz Butter
2oz Caster Sugar
7oz Self Raising Flour
1 Egg
¾lb Cooking Apples (Peeled, cored and thinly sliced)
Lemon Juice
2Tbsp Granulated Sugar


Preheat oven to GM4 350°F 170°C
Cream together the Butter and Sugar
Beat in the Egg
Fold in the Flour
Spread 2/3 mix on the bottom of a 9” Loose Bottom round tin
Spread apples across top followed by lemon juice and sugar.
Dollop the remaining mix on top, alternating with Jam.
Bake for 45mins

Allow to cool slightly before serving, although it's very nice cold :)
