Spicy Chicken Caesar Salad with Poblano Peppers

I combined a Williams-Sonoma recipe with a recipe from Village Gourmet and attempted to make it a bit lower calorie

Ingredients

8 oz. boneless-skinless chicken breast, cut into bite sized pieces (or more if desired)
1 tablespoon Ancho chile powder
1 tablespoon + 1 teaspoon Smoked paprika
1 teaspoon cayenne pepper
2 tablespoon lime juice
1 teaspoon Canola oil
1 head of romaine lettuce
Croutons
Shaved cheese, choose from: romano, parmesan, Manchego, pepper jack (this is optional. I found the cheese is not necessary, if if you want to make it more healthy, omit cheese or use sparingly)
2 poblano peppers
1 tablespoon light mayo
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
½ teaspoon chipotle chile powder
Few drops of your favorite hot sauce
1 tablespoon capers
10 cloves garlic
¼ cup EVOO
1/3 to ¾ cup water to thin out dressing (recipe originally called for 1 cup of oil, but that’s just too many calories!)
2 tablespoon red wine vinegar

Method

Preheat oven to Broil

Combine ingredients to form paste:
1 tablespoon Ancho chile powder
1 tablespoon Smoked paprika
1 teaspoon cayenne pepper
1 tablespoon lime juice
1 teaspoon Canola oil
Rub on chicken and marinate for 30 minutes if desired. Cook on grill or skillet until done. Remove chicken from heat.

Cook Poblano Peppers and garlic cloves in oven until slightly charred. Remove seeds and coarsely chop peppers.

Combine in blender:
1 tablespoon light mayo
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
½ teaspoon chipotle chile powder
1 teaspoon smoked paprika
Few drops of your favorite hot sauce
1 tablespoon fresh lime juice
1 tablespoon capers
10 roasted cloves garlic
1/3-3/4 cup water
Add ¼ cup EVOO and 2 tablespoon red wine vinegar last

wash, dry and chop 1 head of romaine lettuce
Add croutons, shaved cheese, roasted poblanos, chicken, dressing

Makes 2-3 dinner salads around 380-650 calories a piece (depending if you stretch it to 2 or 3 salads, also largely depends on how many/what type of croutons are used, as that can be the highest calorie ingredient) or several side salads.
