Herb-Crusted Chicken and Parsley Orzo

This is a quick and tasty dinner combo. Be sure to start the chicken while the pasta is cooking. Credit goes to Cooking Light.

3/4 cup uncooked orzo
2 tablespoons chopped fresh parsley
2 tablespoons butter, divided
sea salt
freshly ground black pepper
dried fine herbs (I used Herbs de Provence)
1 tablespoon olive oil


Cook orzo according to package directions. Drain. Stir in parsley, 2 teaspoons of the 2 tablespoons of butter, and salt and pepper to taste. Keep warm.

While orzo is cooking, sprinkle both sides of chicken with salt, pepper, and fine herbs.

Melt remaining butter in skillet over medium heat. Add oil to pan, and swirl to coat. Add chicken to pan' cook 5 minutes or until browned. Turn chicken over and cook 7 minutes or until done. Remove from pan and allow to rest for a few minutes.

Serve chicken over orzo and enjoy!
