Difficulty: Easy - for beginners
1 1/2 c. granulated sugar
1 c. (1 stick) butter, softened
2 t. Cream of Tartar
1 t. baking soda
1/4 t. salt
1 tsp. vanilla extract
2 1/2 c. flour
Extra granulated sugar for cookie dough.
Preheat oven to 375 degrees.
Place softened butter in bowl of stand mixer & beat on medium speed until light and fluffy. Add 1 1/2 cups sugar, Cream of Tartar, salt and baking soda; beat until well blended. Beat in eggs and vanilla extract on low speed until blended. Beat in as much flour as possible with the mixer.
Stir in any remaining flour. Transfer mixture to another bowl; cover and refrigerate for 2 hours or until dough is firm. Shape into 1-inch balls. Roll in sugar. Place 2-inches apart on ungreased baking sheet.
Bake in 375 degree oven 8 minutes or until lightly browned. Remove from baking sheet. Cool completely on wire racks.
